Microsoft ICE - Free software from Microsoft for stitching images together.
Hugin - A free open source software package for stitching. Allows a lot of control over the stitching process.
PTGUI - Regarded as one of the best stitching programs. Available in a standard or pro version.
Photomatix - Well known HDR software
Nik Software - Well known plugins that were acquired by Google. Now available free.
